ROASTED ROSEMARY AND GARLIC PO'TATOES!



Hear hear, I do believe that these are the most delectable po'tatoes on ze planet...and they are super DE DUPER easy to make.  Biggest challenge with these bad boys is remembering to take them out of the oven (which admittedly I forget to do sometimes)!  Ergo, if you can put things into the oven and take them back out without killing yourself or maiming a friend this recipe will be a cakewalk for you!


INGREDIENTS MON!
  • 56 oz. new potatoes*
  • 3 Tbsp extra virgin olive oil
  • 1 Tbsp Balsamic Vinegar
  • 3 Tbsp fresh chopped rosemary
  • 5 cloves garlic finely chopped
  • 3/4 tsp salt
  • 1/4 tsp pepper
*new potatoes are just baby potatoes picked before they get super big...they should be about the size of a ping pong ball possibly a little larger with soft skin!  I use ruby and gold new potatoes because they are delicious and i like the color...also, if you can't find new potatoes for whatever reason, you can use fingerling potatoes as well!

DIRECTIONS MON!
  • Preheat oven to 400 degrees
  • Quarter new pototoes or chop potatoes into bite size pieces
  • Put cut potatoes in bowl and add the rest of the ingredients stirring to coat evenly!
  • Grease 2 baking trays and divide potatoes between the 2 trays
  • Roast on the bottom/middle racks of your oven for 40 mins or until slightly browned/golden and lightly crisped!
Serve with vegan cream cheese or alone for a delicious side dish to any meal!
