SNAPPY APPLE COBBLER

A little piece of heaven!


Aloha!  Today's delectable treat is a vegan apple cobbler recipe adapted from The New Farm Vegetarian Cookbook.  As far as baking goes, it's fairly quick and relatively easy to make, but what makes this recipe really stand out is that it satisfies the dessert craving without going overboard on sugar content.  Personally, I am a salty/savory/fried food kind of person but I love this recipe because it is not too sweet!

INGREDIENTS

  • Apple Filling
    • 6 large apples
    • 3 Tbsp margarine
    • 3 Tbsp. sugar
    • 1 tsp. cinnamon
    • 2 Tbsp. dry sherry
  • Batter
    • 1 1/2 c. unbleached flour
    • 1/2 c. sugar
    • 1 1/2 tsp. baking powder
    • 1/4 c. oil
    • 1 c. soymilk
    • 1 tsp. vanilla
DIRECTIONS
  • Preheat oven to 350 degrees
  • While oven is heating peel, core and slice apples
  • Cook apples in margarine over low heat for 5 mins
  • Add cinnamon, sugar, sherry to apples, stir and let cook for 10 mins or until soft
  • Meanwhile, mix together dry batter ingredients then whisk in wet ingredients
  • Once apples are done, oil and 8 x 8 baking dish, pour a layer of batter into the bottom of dish, then arrange apples on top and pour remaining batter over the apples.
  • Bake cobbler for 25-30 mins
